You're Gone, You're Gone, You're Gone Away

Well, she didn't get three months to say goodbye to her mom. Four days after being diagnosed with cancer my friend's mom passed away...

Another friend and I spent Saturday afternoon taking her grocery shopping, as she hadn't been in weeks. Between work, school and visits to the hospital there just wasn't time.

Time.

My how it changes it's mind.

After grocery shopping and stocking up the fridge we went through clothes we had brought for her to choose something to wear to the funeral.

Twenty-three-year-olds are not supposed to be spending their Saturday nights like that. Though I was glad to be able to do something. Anything.

It's quite a feeling of helplessness knowing that there's nothing you can say or do to calm the tide of anger, sadness, pity, that was tearing at her inside.

Her brother's six-month-old baby girl seems to be the thing that is holding everyone together in one piece (peace?). This tiny, innocent, obliviously ignorant wonder cooing and laughing was bringing smiles and warmth to everyone in that house.

The same thing yesterday. A bunch of us were all sitting around the funeral parlour, choking back tears and grief, and this little baby was laughing and making us see there is still something bright in this world.

I've recently added three DVDs to our collection. First, I should say, I don't normally buy a DVD unless it's a movie I know I'll want to watch over and over. Hence why I've added RENT, Garden State and Love Actually.

This afternoon after being bummed out at my friend's news I decided to watch RENT and cook up a new recipe I saw in the Winter 2006 edition of Rodale's yogalife magazine.


Here's the first one:


Carrot Quinoa Soup


3/4 cup quinoa, rinsed well and drained

5 cups low-sodium chicken or vegetable broth
2 tbsp unsalted butter
1 cup chopped onion (about one small onion)
1 tsp whole cumin seeds (or 1/2 tsp ground)
1 tsp whole coriander seeds (or 1/2 tsp ground)
1 bag (1 lb) baby carrots
juice of one lime
salt and pepper

1. Combine quinoa and 1 1/2 cups broth in a small pot. Bring to a boil over high heat. Cover, reduce heat to medium-low, and simmer until quinoa is tender, about 12 to 15 minutes (it's fine if a little unabsorbed liquid remains in the pot).

2. Meanwhile, melt butter in a large pot over medium-high heat. Add onions and saute for two minutes. Add the cumin and coriander seeds and cook, stirring, until seeds are toasty and fragrant, about one minute more (30 seconds if you're using ground spices).

3. Add the carrots and remaining 3 1/2 cups broth. Bring to a boil. Cover, reduce heat,and simmer until carrots are soft, about 10 to 15 minutes.

4. Puree soup in the pot with an immersion blender (or transfer to a regular blender) and process until smooth.

5. Add quinoa and any remaining broth to the soup. Season to taste with lime juice, salt and pepper.

Per Serving: 270 calories, 11 g protein, 38 g carbohydrates, 10 g fat (4.5 g saturated), 4 g fiber, 190 mg sodium, 15 mg cholesterol

Prep Time: 25 minutes
Servings: 4 to 6


Three months

Just got bad news... the mother of a close friend of mine has cancer, and less than three months to live.

Three months.
Is not a long time.
To finish living.
To tell you I love you.
To see the stars.
To accept this fate.

The emotions are really confusing. I know I'm sad -there are tears. I know I'm angry -my teeth are clenched. I know I'm helpless -what does one do at times like this?

My friend told me to appreciate everything I've got -- because you never know when time will expire.

Time. Three months is not long. But it can also seem like an infinity when you're waiting to for someone you love leave you. When you're waiting for the pressure on your heart to subside- just a bit. When you're waiting to make the final decision.

Patience, courage and love my dear. You know I'm here for you. You are the strongest person I know, and I know you can get through this.
